This recipe is a breeze – just 10 minutes and a handful of top-notch ingredients are all it takes. Meet the Italian picnic sandwich, crafted to feed a hungry crowd at home or an ideal lunch to take with you to the park or the beach.

Ingredients:

Bread: You’ll want a large piece of bread like a ciabatta loaf or a sturdy focaccia loaf.

Cheese: Opt for Italian cheeses here and used provolone and fresh mozzarella.

Meats: Head to your local deli counter and pick your favourites!

Greens: I used iceberg for crunch and rocket for a nice peppery flavour.

Marinated onions: You can use raw red onions here, but the marinated onions are so flavourful and easy to make.

Tomato: Pick whatever tomatoes are ripe and in season for best flavour.

Calabrian Chili Mayo: Combine good quality mayonnaise with some calabrian chili paste for a super flavourful sandwich spread.

Instructions:

  1. To make the marinated onions: Place the sliced onions in a small bowl. Toss with the olive oil, red wine vinegar, oregano, and salt until well coated. Marinate for at least 30 minutes.

  2. Slice the loaf of choice in half length-wise.

  3. In a small bowl, mix the mayonnaise and chili paste together until smooth. Spread the mayonnaise on the bottom half of the bread.

  4. Layer on your the provolone cheese, mortadella, capocollo, genoa salami, and soppressata. Top with the thinly sliced tomatoes and sprinkle with flaky sea salt and cracked pepper.

  5. Add the torn pieces of mozzarella and the marinated onions and top with the shredded iceberg and rocket. Drizzle with the dressing from the marinated onions and top with the top slice of the bread.

  6. Cut the sandwich and enjoy.

Grilled Peach Panzanella Salad

Get ready for a taste explosion! Imagine the sweetness of peaches, the creaminess of burrata cheese, and the saltiness of prosciutto all dancing together on your plate. This easy recipe is perfect for a light lunch or dinner — it'll leave you feeling refreshed and completely satisfied. Get ready to savour the flavours of spring in every bite!

Ingredients:

7 tablespoons of extra virgin olive oil

3-4 cups of slightly stale sourdough or ciabatta bread

2 ripe peaches

Crisp greens of choice

1 burrata cheese

100 grams of prosciutto

2 tablespoons of white wine vinegar

2 shallots

1 garlic

2 teaspoons of honey

1/4 cup basil

Instructions:

  1. Preheat oven to 200. Add cubed bread onto a baking paper and toss with 2 tablespoons of olive oil and a big pinch of salt. Bake for 10 minutes, toss then bake another 5 minutes until the bread is golden and toasted. They will continue to crisp up once removed from the oven.

  2. Make the vinaigrette. In a small bowl, add shallots, garlic, 4 tablespoons olive oil, white wine vinegar, and honey, and whisk to combine. Add salt and pepper to taste. Pour half of the dressing over the bread and toss to just soften.

  3. Preheat grill to medium-high. In a medium sized bowl, add sliced peaches, 1 tablespoon of olive oil and a sprinkle of salt, and toss together. Place peaches under the grill and cook 1-2 minutes on each side.

  4. To a large plate or serving platter, add crisp salad greens, soaked bread, and torn prosciutto. Arrange peaches and burrata on top, and finish with basil, salt, pepper, and a bit more vinaigrette.

Your new favourite cocktail. If you're a margarita fan, you'll love this tropical twist with the refreshing taste of passion fruit. It's perfect for a relaxed poolside sip.

Ingredients:

60ml Tequila

30ml Grand marnier or cointreau

30ml Passion fruit puree

20ml Fresh lime juice

20ml Simple syrup or agave syrup

Tajin or salt for the rim

Dehydrated lime slices for garnish (optional)

Instructions

Dip the rim of your glass of choice in a small amount of water and then dip into a container filled with salt or tajin and fill with ice. In a cocktail shaker, combine the tequila, grand marnier or cointreau, passion fruit, lime, and simple syrup with a couple cubes of ice and shake vigorously. Strain into the prepared cocktail glass and garnish with a dehydrated lime slice, if desired.
